To be honest, summer decided this weekend to turn its back to Belgium, but maybe you are more lucky in your home countries. And to celebrate that, or to bring back summer in the grey and rainy houses of the poor Belgians, I’ll suggest you a most easy and summer-y dessert that all of you can make at home !
What do you need?
- 200 g of cottage cheese
- 100 g of speculaas (a typical Belgian cookie, but you can use any butter cookie you like)
- 20g of butter
- 10 gelatine sheets
- 5 dl of cream, 40%
- 250g of sugar
- 1 vanilla bean
- 400g of raspberries
- a sip of rum (for the dessert, you can have another sip)
What do you do?
Melt the butter and crunch the cookies into small pieces; mix them together so that the crunched cookies become a bit sticky.
Cover the bottom of four glasses with the butter-cookie mixture and press it with your fingers. Leave it for about half an hour in the fridge in order to solidify.
In the meantime, soften the gelatine sheets in some cold water. Whip the cream until solid peaks are formed and mix it with the cottage cheese. Add the seeds of the vanilla beans and the sugar. Mix until you obtain a smooth mass. Wring the gelatine sheets, let them melt in some hot water and add everything to your just-obtained mixture.
Pour your cheese-y mixture onto the cookie-layer of the glasses or the spring form and leave it again for a couple of hours in the fridge.
For serving, crush the raspberries with a fork and add some rum. Top the (four) cheese-cake(s) with the raspberry salsa and enjoy summer (or pretend to do so!)
